 Brussels Sprouts are an excellent source of mineral Sulphur and this has a cleansing and antiseptic effect on the digestive system, bloodstream and skin cells.  Sulphur foods are essential for maintenance of healthy skin, nails and hair as they are a rich source of keratin, a protein substance that is also part of insulin, and the hormone that promotes carbohydrate metabolism.  Brussels Sprouts should not be boiled.  They can be lightly steamed of finely chopped and added to a fresh garden salad.  The strong taste of raw Brussels sprouts is due to the high Sulphur content and that can be destroyed when overcooked.  Sulphur foods also promote the digestion of protein foods.

 

Brussels Sprouts are also an excellent source of the minerals:  Potassium and Phosphorus and a very good source of Magnesium, Iron, B complex vitamins and a good source of vitamins (A & C when freshly obtained).
